5 Health

Spinach is a great vegetable, but kale is naturally lower in oxalates than spinach. Oxalates bind with calcium to form sharp crystals that are the most common type of kidney stones called calcium oxalate. Kale is deemed such a superfood because it is so relatively low in oxalates and so relatively high in vitamins and antioxidants.

Kale is loaded with vitamin K, which serves as a catalyst for calcium to build bones. See more: Vitamin K, Bone Health & Recovery: A Founder's Real Story

7 Antioxidants & Plant Compounds

Yes. Kale naturally contains antioxidants, including vitamin C, beta-carotene, flavonoids, and other beneficial plant compounds.

Antioxidants are compounds that help protect cells from oxidative stress caused by unstable molecules called free radicals.

Phytonutrients are naturally occurring compounds found in plants. Kale contains various phytonutrients that contribute to its deep green color and nutritional profile.

Kale's rich green color comes primarily from chlorophyll and other naturally occurring plant compounds.

Carotenoids are plant pigments found in colorful fruits and vegetables. Kale naturally contains carotenoids such as lutein and beta-carotene.

Carotenoids are antioxidant compounds that play various roles in human nutrition and are commonly associated with eye health and overall wellness.

8 Freeze-Drying & Quality

No food processing method preserves every nutrient perfectly, but freeze-drying is generally recognized as one of the gentlest preservation methods and helps retain many naturally occurring nutrients found in fresh produce.

Freeze-drying uses low temperatures compared to many conventional drying methods. Consumers often describe freeze-dried foods as minimally processed, though definitions of "raw" can vary.

High heat can affect certain sensitive compounds. Freeze-drying is chosen because it helps preserve the characteristics of fresh kale while creating a shelf-stable product.

Yes. We are committed to quality standards and sourcing USDA Organic kale from trusted growers.

11 Fresh vs Freeze-Dried Kale

Not necessarily. The nutrient content of kale depends not only on how it is processed, but also on how long it spends between harvest and consumption. Fresh kale transported through the conventional supply chain may spend days or even weeks being harvested, cooled, shipped, stored, displayed, purchased, and refrigerated before it is eaten. During that time, certain nutrients can gradually decline. By contrast, freeze-dried kale is typically processed soon after harvest and preserved in a stable form, helping retain many naturally occurring nutrients.

Both can be highly nutritious. Fresh kale offers natural water content, minimal processing, familiar texture and taste, and can be eaten raw or cooked. Freeze-dried kale powder offers long shelf life, convenience and portability, year-round availability, preservation of many nutrients through low-temperature processing, and less risk of nutrient loss during extended storage and transportation.

Refrigeration helps slow nutrient degradation, but it does not stop it completely. After harvest, leafy greens continue to undergo natural biological changes. Some nutrients—particularly certain antioxidants and vitamin C—may gradually decline during storage and distribution.

Vitamin C, some antioxidants, certain phytonutrients, and some carotenoids can be affected by storage time. Minerals such as calcium, potassium, magnesium, and manganese are generally much more stable.

Not at all. A high-quality freeze-dried kale powder made from 100% organic kale can provide many of the same naturally occurring nutrients found in fresh kale. In some cases, freeze-dried kale processed soon after harvest may retain more of certain nutrients than fresh kale that has spent extended time in transportation, storage, and refrigeration.

Freeze-drying is sometimes described as helping "lock in" nutrients because the process preserves the food shortly after harvest rather than allowing nutrient changes to continue during weeks of distribution and storage.
